2020年重新記載一點一滴

幾年間發生左好多事情,有上有落,有開心,有唔開心。

工作上既不如意,遇人不熟,都已經過去。有一仲感覺今年會係新開始。上天總會對我有一點留戀及眷顧,讓我好好留係屋企照顧家人。特別係呢段疫情既時間,非常重要。

放低左一段長時間冇update 記下事情。係時候重新出發,記下一點一滴,繼續分享生活樂趣及重溫。自從Yahoo Blog 關閉後,已將生活記載搬到 Blogger,好可惜因為Yahoo呢個原因,相片已經再睇唔返。

日式芝士蛋糕 (Light Cream Cheese)

日式芝士蛋糕

材料:
Cream Cheese 125g
Milk 60g
Butter 20g
大蛋 2隻
低筋麵粉 20g
玉米粉 15g
糖 55g
檸檬汁或醋 數滴

做法:
1. Cream Cheese, Milk, Butter 隔水加熱,攪拌到無粒粒
2. 加入蛋黃拌勻
3. 加入篩過低筋麵粉、玉米粉拌勻,攪拌到無粒粒
4. 焗爐預熱180度,預備 6寸烤模,鋪底及邊(搽牛油亦可)。如是活動烤模,需要用錫紙包好烤模外圍以免烤焗時入水。
5. 蛋白加檸檬汁或醋 數滴,打起出現大泡沫後分3次加入砂糖,打到濕性發泡(拉起約2-3寸長條不會掉下)
6. 分2次與蛋糊輕輕拌勻,不要過度攪拌導致蛋白消泡
7. 入爐前提起敲三下,令大氣泡震出
8. 烤盤加入凍水,蛋糕放入水盤裏。200度焗15分鐘上色防止裂面,上色後改120度焗60分鐘。中途加入凍水降溫。完成後,再悶10分鐘,然後打開少少焗爐門散熱5分鐘,再拿出來。

P.S. 每家焗爐溫度不一樣,要按各家焗爐脾氣試試

芋圓紅豆沙

芋圓紅豆沙

材料:
陳年陳皮 1片
紅豆 4 兩
芋圓(自己喜愛)

三色芋圓

阿仔鐘意食芋圓,的起心肝試下整。
材料:
紫心、黃心蕃薯 各100g
芋頭 100g (芋頭比較乾,搓粉時可加入少少水)
木薯粉35g
生粉15g
糖10g (隨心)

1. 水滾落芋圓
2. 浮起後 1 分鐘熄火
3. 撈起放入冰水
4. 加入自己鐘意既糖水一齊食



15-20分鍾蒸熟,加入糖壓爛


加入木薯粉、生粉,搓成光滑 (芋頭比較乾,搓粉時可加入少少水)



搓成長條,切粒,形狀大小自己喜好。切後芋圓放入碗,撒上少許太白粉或木薯粉,讓每粒芋圓都沾上粉。

完成!


可以放冰格1-2個月
